Bolo de Claras - Egg Whites Ring Cake



Fiz este bolo para aproveitar 5 claras que me sobraram depois de fazer uma Tarte de Pastel de Nata (aka Flan) que mais tarde postarei a receita. Podem pensar que este bolo é mais um daqueles secos mas, pelo contrário fica fofo como os paes de ló e é bem saboroso. Ideal para acompanhar um chá ou café se tem visitas em casa.

Ingredientes:

- 4 c. (sopa) de manteiga
- 2 chávenas de acúcar
- 1 chávena de leite
- 3 chávenas de farinha
- 1 chávena de Maizena
- raspas de limao q.b.
- 1 c. (chá) fermento em pó
- 1 c. (sopa) de óleo
- 5 claras

Ligue o forno a 180graus. Bata as claras em castelo. Numa tigela leve a manteiga a derreter no micro-ondas e depois junte o acúcar. Bata até ficar esbranquicado. Adicione a farinha, a maizena e o fermento peneirados e alternadamente o leite. Misture bem. Acrescente as raspas de limao, o óleo e as claras batidas e envolva bem.
Leve ao forno em forma untada e polvilhada. Verifique se está cozido com o auxilio de um palito.


I've baked this cake with some leftover egg whites from a large home-made Custard Tart which i will post later on. I decided to start posting some Portuguese recipes in English as well so i hope you can try some of our delicacies. I am starting with something sweet as i really enjoy baking. Here we go.

You will need:

- 4 tbsp of butter
- 2 cups of sugar
- 1 cup of milk
- 3 cups of self-raising flour
- 1 cup of white corn flour
- lemon zest
- 1 tsp of baking powder
- 1 tbsp of sunflower oil
- 5 egg whites

Preheat the oven to 190°C/fan170°C/gas 5. Grease and line a ring cake tin (roughly 26cm diameter). Whip the egg whites. You can melt the butter in the microwave and then add the sugar and stir until pale. Gradually sift the self-raising flour, the corn flour and the baking powder into the mixture and add the milk. Stir a few times and then add the lemon zest, the sunflower oil and the egg whites mixing well.


Spread out the cake mixture into the tin. Bake in the oven for 40minutes until risen and golden brown.

This cake is delicious eaten just as it is or served with custard or cream. Don't forget to brew the tea or percolate the coffee, hummm soooo soft!!!
